Next Best Pizza Topping: Brussels Sprouts


Keep your meat-lovers pizza: We’re ordering the sprouts. This simple, four-ingredient pie stands out on A Tavola’s luxe menu, which boasts plenty of fancy ingredients like fig jam and house-made sausage. Brussels spouts and onions are heavy-duty flavors, but under the searing glow of a brick oven, they mellow and sweeten right up.

To these veggies, A Tavola adds extra virgin olive oil and Fontina cheese. And that’s it. No sauce? Nope. The olive oil provides the necessary moisture to the pie, while allowing the crust to soak up the sweet flavors of the Brussels sprouts and onion. The crust is charred “cheetah style” around the edges, a classic Neapolitan brick-oven style. The crisp crust complements the sprouts and adds body and depth to the softened onions, and the melted Fontina is creamy and just a little bit funky. If you’re looking for more spice, a sprinkle of red pepper flakes is a perfect touch and brightens up the sprouts just so.
