Veggie Watch: Boomtown Biscuits and Whiskey’s Sweet Potato Hash

When you think of comfort food, a vegan option may not cross your mind first. But Boomtown Biscuits & Whiskey will make you think twice next time. The menu is known for its biscuits and gravy, chicken and—you guessed it—whiskey. However, this vegetable-based plate holds its place among the rest.

The Oregon Trail is loaded with sweet potatoes, Brussels sprouts, kale, sliced carrots, scallion, poblanos, and a bulgogi glaze. The sweet potatoes give a smooth consistency to the base, complemented by the crisped kale. The glaze is a Korean-inspired sauce, made with sesame, carrot, and green onion. Each bite leaves you with a hint of savory and sweet. Still hungry? Pair the plate with a Boomtown biscuit and one of the menu’s six butter or jam options. You won’t need more than that—trust us.
