Word is out about the rooftop bar. But insiders know that Metropole’s best kept secret is its power breakfast. We stopped in a few weeks ago and were blown away by comfortable staples elevated with an artisanal twist. Take the buttermilk malted pancakes—who knew malted milk powder could add such depth of flavor to the basic flapjack? Spiced walnuts, bruleed bananas and bourbon maple syrup make this humble classic soar. Eggheads should dig into the poached farm eggs over soft Moretti polenta and braised kale. However, the housemade pancetta on this dish is the real secret weapon—thick and meaty slices of Italian-style bacon essentially ruined me forever on regular rashers.
