Vendor Spotlight: The Delish Dish

Chef Mavis Linneman-Clark incorporates global styles into her homecooked dishes as she keeps up with the hottest wedding food trends.

It was while living in Italy that Mavis Linneman-Clark, chef and founder of Covington-based The Delish Dish, first discovered her love of ethnic recipes. “My host mom didn’t speak a lick of English, but every night the two of us would sit down to a home-cooked meal with a dictionary between us,” Clark says. “In those six months, I learned how to speak Italian, how to cook a killer risotto, and how a meal made with love could transcend language barriers—I realized the true power of food to convey love, friendship, and build relationships.”

Later stints in Japan, Africa, and Philly, plus time at Chicago’s esteemed Kendall College—where she took the institute’s intensive Mexican Master class—gave Clark plenty of global inspiration from which to cull her gourmet recipes. As the preferred wedding caterer for the Contemporary Arts Center and Memorial Hall, among others, Clark says food “stations” are popular right now. “We’ve done shrimp and grits bars, biscuit bars, taco bars; even a station with mini Kentucky hot browns made to order.” This summer’s hottest menu item? Mango-shrimp lollipops. “Everyone loves spicy-sweet shrimp on a stick!”
