Chipotle—known for its “food with integrity” ethos—debuted the vegan offering in target markets California, Colorado, and Chicago back in spring of 2013. Corporate chef, Nate Appleman—a Maisonette alum—spent months sourcing a supplier that met the company’s integrity criteria. The non-GMO, artisanal tofu from Hodo Soy is now available at all locations in the US and Canada.
