Huitlacoche tacos from Bakersfield OTR

Nothing screams delicious like a corn fungus taco. And yet, they are So. Darn. Tasty. If you’re not familiar with huitlacoche, also known as corn smut, or Mexican truffles (the preferred terminology of the haute-foodie set), it’s a delicacy of Mexican cuisine dating back to the Aztecs. The dark gray to black colored fungus is rarely found in American corn, as farmers have worked hard to prevent the blight, which can destroy entire crops. Cooked, the mushroom has a smoked, almost woody flavor. Bakersfield pairs it with roasted poblano, corn, cotija cheese, and cilantro for a lovely little $4 taco. I’ll take two and a basket of chips and guacamole any day.
