Even if you’ve moved past the whole salted caramel thing, you’re still gonna want to give this little pastry a chance. Because it’s less about the salt + caramel combo and more about the caramel + shortbread combo. Which is a really great idea. Phillip and Kimberly Reschke—fourth-generation owners of the 81-year-old Wyoming Pastry Shop—top their wee cookie triangles with a solid inch of very soft caramel, dip it in chocolate, and sprinkle on some of that sea salt you’ve been hearing so much about. Each bite is like a tricked out Girl Scouts Trefoil cookie.
