When chef Jean-Robert de Cavel arrived in Cincinnati 22 years ago, the dining scene was remarkably different than it is today. From working at the dearly departed Maisonette to opening his own restaurants, de Cavel has had a front row seat to the city’s food transformation. (You can read more about that in Alyssa Brandt’s 2013 profile of the French-born chef.) We sat down with him at his restaurant, Jean-Robert’s Table, to talk about his experience in Cincinnati. Later, we sat down with dining critic Jeff Mathews to see when he started thinking critically about food and why a Chinese buffet is the perfect death row meal.
