For more than 200 years, the French have been celebrating the Christian feast day of Epiphany by gorging on impossibly flaky, buttery layers of puffed pastry that encase a dense schmear of almond cream. At French Crust, Jean Philippe Solnom’s galette des rois (king cake) keeps tradition alive—a small ceramic baby is baked inside each cake, commemorating the Magi’s gifts to the Christ child (heads up: Special order only). The lucky nibbler who discovers the toy (hopefully without choking on it) is promptly declared king for the day.
