Because toast is apparently the latest thing, Dining Editor Joanne Drilling shares her favorite dead-simple recipe for an Avocado English Muffin:
INGREDIENTS
1 English muffin, split and toasted
2 farm fresh eggs, cooked sunny side up
harissa
1 avocado
pinch of cumin
squeeze of lime
salt and pepper
METHOD
Mash the avocado with the cumin, lime juice, and plenty of salt and pepper. Divide it between the muffins and add a dab of harissa. Top each with a sunny side up egg. Season the egg with salt and pepper. Serve warm.
