Local cheese fiend Maria Walley created Daelia’s Biscuits for Cheese. The launch of her new Beer Flats (the cracker for beer) has kept her busy—and hungry.

Where did your love of cheese come from? I’ve always been passionate about food, wine, and beer. I read cookbooks for fun when I was a kid. I grew to love agricultural handcrafted products, and the more farms or vineyards I visited, the more I came to appreciate the complexity of an authentic artisan product.

So, you wanted to create a cracker to specifically compliment cheese? I recognized a need for a different type of cracker made with fruit and nuts. Cheese is often served with crusty, fruity breads, and I wanted to create a shelf-stable cracker version.

Do you think your crackers are indulgent? Anything made with butter and beer can’t help but be a bit indulgent!

Now you have Beer Flats. What would you pair with those? I love our Porter Crackers with the Mt. Carmel Stout and a good blue cheese like Stilton or Bayley Hazen Blue. The Original Golden Helles from Christian Moerlein pairs well with our Pilsner Crackers.

Do you ever get tired of talking about cheese? Not really, but I’d much rather eat it than talk about it.
