To eat at Jim Dandy’s is to bow before a pillar of smoke. The place has all the trappings of a BBQ temple: log cabin interior, two huge smokers with smoldering hickory and cherry wood, Muddy Waters posters, and the Allman Brothers on the sound system. The servers carefully weigh each portion of pulled pork—that’s how much they value it. A juicy pile of rope-like strands, it mates well with all their housemade sauces but can also stand alone. The baby back and fattier St. Louis ribs both have a laudable ratio of seasoned char to rich, smoky meat. Avoid the brisket (ours was crazy dry) and get the wood fired chicken—it’s phenomenal.
