When Jean-Robert de Cavel, impresario of all foods French, and mentor to many an area chef, decided to dip his pinky toe into the fast-casual market, he immediately called Roy Silcott. A long-standing acolyte having worked at Maisonette, Jean-Robert’s Table, and the now-defunct Jean-Robert at Pigalls, and Pho Paris, Silcott was also the executive chef of the much-loved Hyde Park Tavern for three years. Together, the two have taken a former Lime taqueria location on Edwards Road and converted it into a red, white, and blue fast casual spot serving contemporary riffs on Gallic classics. The menu is stocked with items like Niçoise salad, French onion soup, steak hache (a bun-less burger available with turkey, local bison, lamb, and beef), crème brûlée, and pot de crème. Vegetarians won’t run afoul thanks to Silcott’s bright and flavorful Vietnamese bahn mi sandwich (baked tofu and plenty of pickled carrot and cucumber) or his vegan, gluten-free veggie burger served on a 16 Bricks bun. They’ve also added upscale touches such as flavored spa water, a mimosa bar, craft beer, and wines from Revelry Vintners in Washington’s Columbia Valley.
