Fans of the original incarnation of Cumin will recognize much of Mantra's menu. Chef/Owner Yajan Upadhyaya returns with some of the most interesting Indian food in the city. It's the subtle union of flavors and textures that make these dishes stand out: a little sweet heat, a hit of garlic confit in the ghobi charchari, a Bengali stew of cauliflower and green peas blended with equal amounts of fennel, mustard, fenugreek, nigella, and cumin seeds; the twang of pickled beets against the richness of yogurt and chicken in Kalimirch tikka; herbs de provence and a ginger lime marinade on the perfectly roasted Masala lamb chops.
