Every once in a while, you hit the jackpot. The lunch jackpot, that is. And when I saw the words “head cheese sliders,” on a small blackboard leaning against a wall in an eclectic little strip mall just off 275 and Montgomery Rd., I knew it was just my lucky day. Head cheese, for the win! Chef Ethan Snider is the culinary mastermind behind Summuh artisanal hummus (don’t miss their beet hummus with sesame oil and plenty of black pepper). He has curated the best of the best in local purveyors—think Grateful Grahams, Turner Farms, Fab Ferments, Chocolates Latour, and Finn Meadows Farm, just to name a few—and brought them together under one roof for mid-day meals that are exceptionally tasty and fresh and stimulating for the farm-to-table economy. Snider’s small but mighty menu has something for everyone: A vegan “black & brown” burger rubs shoulders with his Beefy McMeaterson sandwich, stacked with hand-stretched mozzarella, Fab Ferments kimchi, and sorghum mayo. But can either come close to those tender little patties of piggy jowl and gelatin? I guess I’ll just have to go back to find out.
