Snack Attack: Deviled Eggs

Madeira Choice Meats is exactly what you want from a neighborhood deli and butcher shop. “Everything is quality,” says owner T.J. Estell, who started working at the shop in 1981 before taking over as owner in 1998. “That’s our niche here in Madeira. We don’t half-ass anything.” They hand-cut their USDA Choice steaks, grind their own beef daily, and will happily prepare deli sandwiches for you right at the counter. All of their signature salads and side dishes are made in-house, too, including the cool, creamy deviled eggs. On a peak summer weekend, they can sell as many as 500. Fresh large eggs are stuffed with a smooth blend of egg yolks, Hellmann’s mayo, mustard, minced onions, a pinch of salt, and chunky sweet pickle relish—for a perfect bit of texture—and finished off with a sprinkle of paprika and a secret ingredient. “Just like if grandma made it,” says Estell. It appears that Grandma has her work cut out for her.
