If your bowl of ramen soup started its life with a spice packet, then you don’t know ramen. Begin your education with Kaze‘s creamy ramen tonkotsu, studded with sliced pork belly, bright green bok choy, a delicately poached egg, al dente udon noodles, and viscous drops of chili oil. Your belly will be full, your salt cravings will be quenched, and the January deep freeze will seem a little less grim.  The small bowl, priced at $5 for lunch (a large bowl is available for $10), might seem expensive by strip mall Asian soup standards. But Chef Hideki Harada’s rich and hearty ramen bears little resemblance to those less inspired bowls due to its deeply considered flavor contrasts and top shelf ingredients. Soup’s on!
