Sean Kagy, executive chef at Midwest Culinary Institute’s Summit Restaurant, packs a ton of technique into the three-hour Sharpen Your Knife Skills class. Home cooks yearning to mince like Giada can discover the proper way to fold your fingers and which way the knife should go. “You get some speed and different cuts,” Kagy says, “and when you read a recipe you’ll know how to do certain things.” Students also learn how to butcher a whole chicken, peel citrus, and sharpen knives three different ways.
