The Top 6 Dessert Trends for 2015

If you were lucky enough to get tickets to this year’s sold out Sweet Victory event, you know the treats on hand were top-notch. We took the opportunity to ask some of the talented vendors about food and dessert trends for 2015, as well as anything they’d like to see on the sweets scene. Here’s what they had to say:

1. Try the unexpected
Broaden your horizons and go beyond the usual chocolate-on-chocolate desserts. Orchids’ pasty chef Megan Ketover recommends their Earl Grey Bavarian as a delicious change of pace, and the team at Cupcake Crazy favors adventurous flavors like bacon banana pancake.

2. Make it mini
Mini-desserts are still big, excuse the pun. More people are serving small plates and a variety of appetizers at wedding receptions, so small size sweets makes sense. Taren Kinebrew of Sweet Petit likes the idea of mini shooters with mousse, icing shots, or a touch of liqueur, while the team from Mimi’s Cakes and Crafts appreciates the cool factor of mini wedding cakes.

3. Mix it up
You know how the most interesting dishes often contrast sweet and salty, creamy and crunchy? Desserts benefit from variety, too! Try requesting a mix of textures and flavor profiles to include tangy, creamy, and crunchy all in one dish.

4. Hue-Dey
Keep your color scheme in mind and match your dessert to those shades. The monochromatic palette lends an air of thoughtfulness and sophistication to the entire event and—bonus—looks awesome in photos.

5. Food Bars
We’ve hit peak food bar, with people serving up everything from make-your-own martini bars to bite-sized macarons and cheesecake. For dessert bars, the team at Ladybugs Bakery likes to include a combination of fruity, chocolate-y, and vanilla flavors so there’s something for everyone.

6. Make it yours
You know what you like, so why not make your dessert menu as unique as you are? Almost everyone we talked to mentioned the trend towards customization, with clients incorporating their favorite colors, hobbies, even TV shows into cake and cookie designs. Customize your mini desserts and you’re on top of two trends at once!
