You’d have to be living under a rock to have missed the evolution of Jean-Francois Flechet’s waffle empire. First there were those darn-tasty yeast waffles at Findlay Market, then up popped Taste of Belgium in the Gateway Quarter, complete with four varieties of mussels and frites, stoemp mashed potatoes and a wide array of over-the-top baked goods. Now with a second, larger location on Short Vine, he’s well on his way to bringing Belgian cuisine to the Cincinnati masses. And who doesn’t want to start Sunday morning with a killer waffle? Die-hards will go ga-ga for the waffle n’ chicken, finished with Frank’s hot sauce–infused Ohio maple syrup. And while the smoked salmon baguette with herbed goat cheese, lemon, and capers was an elegant sandwich, especially when washed down with a glass of bubbly, it was the humble yogurt parfait that was the real dark horse. House-made toasted granola with vanilla bean-scented yogurt, a mix of fresh and dried berries, and a raspberry puree were all layered together in a pint glass. Who knew healthy could taste this good?
