Have you noticed the new artisan breads at Findlay Market? They’re made by Rob Corwin of Anderson Brick Oven , a local home bakery where every loaf is hand crafted in the old world European style.  “We use only natural ingredients – spring water, flours from Weisenberger Mill, our own wild yeast sourdough starter, plus no oils or sugars – and bake on heated tempered brick,” says Corwin. Corwin adds that they plan to start grinding their own wheat, rye, and corn meal within the next month.They currently offer about a half-dozen varieties (their sourdough rye is pictured) at area farmer markets.

Congratulations to Jean-Francois Flechet and Dan Korman, owners of Taste Of Belgium and Park + Vine respectively, who both celebrate 5-year anniverseries this month. TOB is thanking you by offering 5 waffles for the price of 4 (all 4-packs will contain an extra waffle), while P+V is doing it up with a party during Final Friday on May 25th. Watching both of these businesses grow has been inspiring. Flechet began with a single waffle iron under the awning at Findlay Market, to three locations (Findlay Market, North Market in Columbus, and Taste of Belgium restaurant in OTR) and 70 employees. Dan Korman pioneered the idea of a green general store in Cincinnati during a time when “green living” was still finding its way into the local vernacular, and has since tripled in size – becoming a nucleus of energy for the mindful lifestyle. Our city is richer for them both.

The Pho Lang Thang crew – David Le, plus brothers Duy and Bao Nguyen – will roll out a few dishes from their new restaurant, Quán Hapa at the Asian Foodfest this weekend. Look for Korean style tacos (with napa cabbage, kimchi salsa, & crema), the Quán Hapa lobster roll (brioche bun, water chestnut, scallions, miso, kewpie mayo), and a spring roll (Bò Nhúng Dấm, with vinegar poached beef and pineapple sauce).

Quán Hapa (pronounced “Wang Ha Pa”) is scheduled to open in September at 1335 Vine St. (corner of 14th and Vine) in Over-the-Rhine.

According to David Le, “There is a unique meaning behind the name.  Quan means ‘bar’ or ‘gastro pub’ in Vietnamese. Hapa is a Hawaiian word which means a ‘half-breed’ or ‘mixed blood’ with Asian or Pacific Islander heritage”.  We are Vietnamese, and [our] chef, Matt Cranert is a white guy from Hawaii”.  

Le says that Quán Hapa will feature their interpretation of a “daring and eccentric array” of Asian bar and street food in a comfortable, casual environment. www.quanhapa.com
